This wine is fermented spontaneously.
100% Merlot, only hand harvested in baskets, in October 2006. All season was sunny and dry, with the right amount of rain at the end of the summer, which allowed the grapes to be ripe on perfect time. After taking off the grape stalks, the grape is put in oak vats, where the maceration happens without temperature control and without the addition of any yeasts or other. Maceration goes on for about one and a half months. No filtration or clarification, and no added preservative.
