Notes from Ari himself..:
Zibbibo fermented as crushed whole bunches and Chardonnay 100% hand destemmed, with 2-3 days of skin contact after which it is direct pressed to stainless steel from where it is bottled with just under 10g/L of residual sugar and disgorged after 6 months.
