2022 Controlled Chaos

Notes from Micah, the winemaker...
The first wine made from the Metcalfe vineyard that Etienne (North Wine) & myself took over in late 2021. First time making a Merlot and wanted it to be as far away from a traditional tasting Merlot (gross) as possible. Pleased to say i'm very happy with the outcome - it's delicately perfumed, has beautiful structure, concentrated but light with fine boned tannins. Tempted to keep it all for myself... Dry grown, organically farmed (uncertified) Macedon Ranges whole bunch Merlot, lightly stomped to form a barrier of some sorts to promote a semi-carbonic ferment underneath. Light pigage for 4 days. Elevage in old oak for 8 months. Racked to stainless for 1 month prior to bottling. No additions.
