2021 Balgownie Vineyard 1970 Block

Fine claret from the one and only, Joshua Cooper.
Cabernet from the iconic Balgownie Vineyard. Fruit actually comes from some of the earliest plantings in 1970. Hand harvested and all destemmed. Extracted with a combination of pump overs, delestage and pigage before eventual basket pressing. Aged in a combination of old and new oak, then in stainless. Touch of sulphur at bottling. Deep, complex and incredibly detailed. Blackberries, pepper and forest floor. The most refined of all the cuvees. Cellar, decant or drink now. Which ever you choose, it’s a great decision.
