2021 Light Red

An 80/20 blend of Chardonnay and Merlot from the Adelaide Hills.
Whole bunch Merlot was placed at the bottom of the fermenter while the Chardonnay was crushed and destemmed on top. Light hand plunges for 12 days. The Merlot went full carbonic, with stems and skins, so the fruit profile is dark, but juicy and fresh. We’ve been serving it chilled, a real less thinky more drinky kind of wine. All wines are made with no additions besides a touch of so2 post malo.
