The resulting fruit showed exceptional concentration and thick skins while retaining freshness and natural acidity. Handpicked on 25 March, the fruit was destemmed and direct pressed before settling overnight. The juice was then transferred to two French barriques for wild fermentation with regular lees stirring. Each parcel was destemmed and fermented with a high proportion of intact whole berries, with gentle pump-overs and hand punch-downs throughout fermentation. Handpicked on 1 March, the fruit was gently whole-bunch pressed and settled overnight before wild fermentation.
