2019 I Dreamed I Stabbed You In The Eyes
This is the brainchild of Louis Broderick from Basket Range Wine and Severine Perru, wine director of The Ten Bells in NY.
While they were working a very boozy harvest in the Jura together, they had the opportunity to make their first wine in this emblematic region after a chance encounter with some unicorn fruit (thanks Tony). Didnât need more to fire the sparks of the project! Back to Australia, they vinified their first cuvĂ©es in 2019, with the crazy idea to offer a range of 3 different wines made with the same grapes. Cabernet Sauvignon organically grown in Mount Compass, Fleurieu Peninsula (not certified). All the grapes have been harvested the same day, on the early side. It brings a real sense of freshness and low alcohol to the wines (11% Alc/Vol.). Same process for all the cuvĂ©es: fermentation in stainless steel tanks, Ă©levage in old oak barrels and aged in bottle. No additions. Bottled in January 2020. 1/3 whole bunch at the bottom of the cuve, covered by hand destemmed grapes and a saignĂ©e of Rub. 2 weeks maceration. Light to medium bodied red, subtle tannins. To drink chilled without thinking too much about it either.
