Farmhouse ales are traditionally brewed during winter by farmers to quench their thirst on summer's gruelling days of field work.
This beer matures for 5-6 months in oak barrels. During this long maturation, a slow mixed fermentation by indigenous yeasts brings freshness, dryness and a low acidity.
