2018 Adam’s Evening Two Fruits
Farmed organically at the Yering Farm orchard in Yering in the centre of the Yarra Valley. Final blend: 70% pear, 30% apple, drizabone, nothing added, the Two Fruits is the first release from 2018. The early ripening varieties of Howell, Packham, Beurre Bosc pears and Gala apples are used for the base of this blend, and late harvest Sundowner apples added prior to the bottling. After harvest the fruit is allowed to ripen and soften for a couple of weeks in the shed. The matured fruit is then crushed, macerated and pressed in a traditional cider ‘packing press’ directly to old oak barrels for natural fermentation and maturation for 3 months. In late autumn Sundowner apples that have been left on the tree to become super ripe are harvested and pressed and the fresh juice added to the Two Fruits blend to provide the sugar for a secondary fermentation and promptly bottled to become fizzy. It is left on yeast lees in bottle for a further 3 months and released young and vibrant.
