This is 100% Shiraz hand-picked and sourced in tiny quantities from five amazing sites across the Barossa.
Ebenezer – The famed Hoffmann family. High Eden – Merv Steinert. An amazing Dry Grown site planted in 1978. Flaxman Valley – Nathan Burley from the incredible Flaxman Valley Road. Lyndoch – Kolovic Family. Ideally perched east facing in one of the highest position on the hill. Williamstown – Ted McWatters Tucked away in a beautiful little spot in his own little secluded valley, planted in 1975. Each parcel was treated on its merits and employed a number of different fermentation methods. From de-stemming open fermentation, long periods of skin contact, partial whole bunch fermentation to long and slow carbonic fermentations. The wine was then put into barriques to rest in a cool cellar for around 17 months and was blended on the first day of Spring 2021. The wine displays typical Barossa richness while maintaining elegance and layered complexity.
