Cebreros is the heart of the Sierra de Gredos, which is west of Madrid and belongs to Avila, Madrid and Toledo province.
Cebreros used to be a rustic, forgotten place in middle of Sierra de Gredos mountains – but treasure was hidden in this forgotten place: old vineyards of Garnacha Tintorera and fabulous sandy and slate soil. In addition of Garnacha, Rubén focuses on the white grapes of Albillo Real and Chasselas Doré to create exciting wines of various styles: under flor (the veil of yeast that protects the wine from oxidisation), skin macerated wine (orange wine), and vibrant and bright wine.
