Notes from the maker, Jake..: From Southern Heathcote, a blend of 50/50 Shiraz and Cabernet. The vineyard is in the SW corner of the Heathcote wine region, one of the most southerly vineyards in Heathcote region. Organic practices in the vineyard since inception 20 years ago, handpicked. Destemmed, foot crushed, and basket pressed. Oxidative juice handling. 90% fermented in stainless steel, 10% fermented in old french oak. Rested on full solids over winter, where malo went through uninhibited. Unfiltered, unfined. Only add was a touch of SO2 when racked just before bottling. Strawberry, quava, sour warhead lollies vibe, touch peppery savoury spice. Zingy grapefruit and tropical fruits, bit of texture, and nice acidity carries it all along.
