Hand harvested, whole bunch pressed, racked and fermented wild at cool, ambient temps. Tasted daily and finished once the right equilibrium was achieved. It’s an off-dry style, 36g RS, pH 2.87. Luscious, with saline and citrus characters, but slightly talc and minerally too, finishing cleansing.
