2017 Le Zaune à Dédée
All of Ganevat's wines are biodynamic.
Whole bunch ferment, no racking and all whites go through malolactic fermentation. Only a touch of preservative used at bottling. All wines are bottled in the summer, two years after the harvest. This is Savagnin from the Jura, blended with Alsatian Gewürztraminer and raised sous voile in foudre.
